My favorite summer recipes include fresh fruit like mangos, peaches, and of course Strawberries! So as I’ll do from time to time, I wanted to share the recipe for one of my favorite delicious desserts!
Strawberry Grand Marnier Trifle
Take frozen pound cake out and cut into 1 inch cubes. (It is easier to cut when frozen) Let sit while you prepare the strawberry filling. Also let the Cool Whip thaw while preparing the rest of the dessert.
Make the strawberry topping by combining the strawberries, 1 cups sugar, 1/2 cup orange liqueur, and orange zest in a large bowl and tossing to combine. Let sit at room temperature for 15 minutes, stirring occasionally, until all sugar is dissolved. Refrigerate, covered, until ready to assemble the dessert.
Place cubes of cake into the bottom of a trifle bowl (I used an upside down punch bowl and that works fine!) Drizzle cake with a little orange liqueur preferably Grand Marnier. Add half of the strawberry mixture over the top of the cake cubes, juices and all, spreading strawberries evenly with a spatula and allowing the juices to absorb into the cake. Add a layer of Cool Whip on top of the strawberries Top with the remaining cake cubes and then the remaining strawberries. Top with the rest of the Cool Whip and serve!
You can also make this prior to your event and let sit in the refrigerator until an hour or so before serving.
So good you won’t even think about the calories! Besides, its made with fruit! Score.
Welcome to the world of Sweet Justice! Who are we? Well you know how your parents tell you to go to school, school, and more school, so that you can graduate, get a good job, and make lots of money. Well, they never explain (at least mine didn’t) that no matter how much school you attend and how much money you make, until you do what you love, you will never be truly happy. Well that’s where this journey begins. For 5 years, I practiced law as a defender of the big bad corporate devil, then spent the next 3 years working AS the corporate devil fiercely protecting the assets of my internal clients. In the end, all I wanted to do was be barefoot and pregnant in the kitchen. So when the economy tanked and lawyers started getting laid off, including me, I started baking. First as a return to my therapeutic roots (I used to bake all the time if I was sad or upset and pour all my emotions into a pan of homemade brownies), and then because it made others smile. Never did I think it would be something that would change my life and make me a little change. But it has done both! So I hope you come along on this journey with me. Starting a new business from the ground up can make for some great stories and for some very creative recipes and finds. We are 2 years in and still growing and learning every day.
